Before the Chinese New Year,Lily,an Uzbek teacher working at a kindergarten in Foshan, took her Armenian colleague Elena to Kuaizi Street in Chancheng to search for local and authentic new year flavors.
Traditional New Year delicacies of Guangdong, including crispy pastry dumplings, sweet egg twists, sesame balls and fried red bean puffs, dazzled everyone's senses.Invited by hospitable shop owners, the two foreign friends embarked on a delightful culinary journey to create these festive treats.
In the past, families often prepared traditional snacks like fried red bean puffs at home in the days leading up to the Chinese New Year, using time-honored hand-making techniques to convey their warmest wishes for the upcoming year.Today, several well-established eateries in Chancheng still use these traditional methods, making them an important representation of Foshan's culinary culture.
Guided by the shop owner, they began by mixing glutinous rice flour and all-purpose flour in the right proportions, adding water to create a dough. They then rolled small balls of meticulously made red bean paste and placed them in the center of the dough. With a gentle pinch and a swift motion of their fingers, the red bean pastries took shape. As they sizzled in the oil,the sound seemed to herald the arrival of a prosperous New Year.
Soon, the golden and crispy red bean puffs were ready, releasing a cloud of sweet, fragrant steam. One bite revealed the sense of a crunchy exterior and a sweet filling, instantly dispelling the chill of winter.
