With aromatic marinade, fresh seafood, tender Shacha beef and soothing white congee, Chaoshan cuisine, one of the three major regional cuisines in Guangdong cuisine, serves as a living dictionary for the culinary culture of eastern Guangdong, and leaves an unforgettable impression on the diners with its exquisite flavors. Traditional Chaoshan cuisine embodies the essence of ingredients nurtured in the Chaoshan area. A table of classic Chaoshan dishes, as it always evokes nostalgia for Chaoshan natives, has also captivated the taste buds of Chen Xiaodong, a post-80s young chef who is not even a Chaoshan person.

Chen Xiaodong (also known as Chef Qi) is the Executive Head Chef and co-founder of the Yuè Creative Chinese Dish. He enjoys traveling around the world and exploring various regions of China. When he visited the Chaoshan area in eastern Guangdong, he was captivated by the local customs, cultural heritage, and culinary traditions. Inspired by this experience, he teamed up with his partners to establish the Yuè Creative Chinese Dish Restaurant, aiming to reinterpret the romance of Chaoshan cuisine through modern culinary techniques.
谈及和潮州菜的结缘,时间要重回2015年至2016年。“当时我们周游列国,到国内外地方餐厅取经,挖掘当地的饮食文化。当回到广东的潮汕地区,我被当地的浓厚地域文化吸引着。”对于烹饪,陈晓东喜欢和同伴到外地“调研”,走、看、品,了解不同地区风土人情。
When it comes to cooking, Chen likes to conduct research trips with his team, immersing themselves in the local surroundings to observe, taste, and understand the unique characteristics of different regions. Recalling the beginning of his connection with Chaoshan cuisine, Chen takes us back to the years 2015 and 2016. "During that time, we traveled extensively, visiting local and international restaurants to uncover their culinary cultures. When we returned to the Chaoshan area in Guangdong, I was deeply drawn to its rich cultural heritage."

非潮汕人,但被潮汕文化折服。在陈晓东眼中,潮汕地区保留着传统文化习俗,“无论是节日,还是家中大小事,潮汕人会遵循数代流传的习俗,他们对文化抱有敬重的态度,敬重传统、敬重风俗、敬重食材,让潮汕文化保留着独特的标签和辨识度。”潮汕文化的魅力在陈晓东心中埋下了根,他希望融入世界各地的优异食材,以现代料理手法探索、致敬潮汕文化。
Although Chen is not from the Chaoshan area, he was deeply impressed by its cultural heritage. In his eyes, traditional customs abound in the Chaoshan area. "Whether it's festivals or daily routines, Chaoshan people adhere to customs passed down for generations. They have a profound respect for their cultural heritage, traditions, customs, and ingredients, which gives Chaoshan culture its distinct identity and significance." The allure of Chaoshan culture has left a lasting impression on Chen, and he hopes to integrate exceptional ingredients from around the world, to explore and pay tribute to Chaoshan culture through modern culinary techniques.
