Guangdong fica perto do mar e tem um grande número de caranguejos marinhos, sendo os caranguejos verdes os mais famosos. Em comparação com a caranguejeira chinesa, a caranguejeira verde que vive nas zonas de água doce e salgada do estuário do rio das Pérolas parece estar fora da ribalta. Guangdong produz caranguejos verdes durante todo o ano, que são classificados em diferentes tipos com diferentes sabores e preços em função das diferentes fases de crescimento.

Guangdong produces green crabs all year round, and they are categorized into different types with different flavors and prices in terms of different stages of growth.

秋季是吃蟹的好时节，各色青蟹早已崭露头角，成为热销产品。广东近海，海蟹居多，青蟹最为著名。相对于江南大闸蟹的名声在外，生活在珠江口咸淡水区域的青蟹总是显得淡定而从容。广东一年四季都有产青蟹，以青蟹的不同生长阶段分为：水蟹、肉蟹、膏蟹、奄仔蟹、重皮蟹、黄油蟹等。每个阶段的青蟹味道都不同，例如肉蟹以肉为美，优质肉蟹的蟹肉丰满、爽滑鲜甜；膏蟹以蟹膏美味著称，各个阶段的青蟹价格亦有所不同。
