"Freezing technology" displayed on a goldfish and a 350-kilogram tuna cut on-site
More than 1,000 enterprises from nearly 20 countries and regions around the world attended the event to display new technologies, new products and new achievements in the field of agri-food and pre-cooked food.
On March 24, the 7th China International Food and Ingredients Expo and the 1st China International Pre-Made Food Industry Expo opened in Dongguan, Guangdong Province.
This year's exhibition consists of eight venues, covering an area of over 40,000 square meters. It was the first time that pre-cooked food industrial parks attended the exhibition. During the exhibition, over 20 professional activities were held, such as forums, seminars, special promotions, selection of superior products, supply and purchase matchmaking events, and trade and investment summits, accelerating the high-quality development of the pre-cooked food industry.
A number of Guangdong table delicacies were offered at the event, including lychee, bananas, Marble Goby, turtles, and preserved pork.
A 350-kilogram "giant" bluefin tuna won the attention of visitors. Splitting is an important procedure in the production of pre-cooked dishes. With their profound knowledge of the fish skeleton, four masters skillfully sliced the fish and distributed its meat among audiences.
"Freezing technology" was displayed on a goldfish. The staff put the goldfish into a freezer machine at tens of degrees Celsius below zero. After freezing the fish for a while, they put it into the water, and the goldfish came back to life. If food is frozen with this technology, the ice crystals will be only 5 microns in diameter, small enough to "hide" in cells. After the meat thaws, it will return to its original state.
Large purchasing groups, supermarkets, catering enterprises and other key buyers were invited to visit the exhibition offline, upgrading Guangdong's rural industries and promoting the high-quality development of agriculture.
金鱼“眠冻”后复活,700斤金枪鱼现场切割试吃
3月24日,第七届中国国际食品及配料博览会、首届中国国际预制菜产业博览会在广东省东莞开幕,来自全球近20个国家和地区的1000多家企业集中展示农业食品及预制菜领域新技术、新产品、新成果。
本届展会面积超过4万平方米,设置八大展区,各地预制菜产业园首次亮相。展会同期举办论坛研讨、专题推介、优品遴选、采购对接、贸易投资峰会等20多场专业活动,邀请众多重量级嘉宾畅谈预制菜产业发展,加速推进预制菜高质量发展。
展会现场,荔枝、香蕉、笋壳鱼、龟鳖、腊味等驰名海内外的美食纷纷亮相。
一条700斤“巨无霸”蓝鳍金枪鱼引发了现场参会者围观。分割是预制菜制作当中重要工序。主刀师傅现场展示了金枪鱼的分割工序。在这之前,主刀师傅需要了解鱼的骨架,才能让分割变得稳、准、狠。在四个师傅紧锣密鼓切割的同时,参会者还可以品尝已经预处理后的金枪鱼鱼肉的风味。
现场还对一条金鱼展示了“眠冻技术”。工作人员将金鱼放到零下几十摄氏度的眠冻机中,将鱼冻住后,过了一会放入水中,金鱼又活过来了。食品使用“眠冻”技术后,冰晶直径仅为5微米,足以“躲”在细胞内部,因此,解冻后即为原有状态。
