City Life | Jiulong Village, one of Guizhou Province’s top tourist destinations, has hosted its annual folk festival for five consecutive years, attracting more than 150,000 visitors. One of the festival’s biggest highlights is the famous Dragon King’s Feast, where the signature dish Zao La Yu (Fermented Chili Fish) has become a must-try local specialty. The fish is raised in fresh, flowing water and cooked with Zao La Jiao, a distinctive fermented chili paste known for its sour and spicy flavor. Made from fresh chili peppers, glutinous rice wine lees, and fermented for more than three months, the paste is then slowly stir-frieds for two hours to bring out its rich taste. According to local culinary traditions and historical records, Zao La Yu dates back to the mid-Qing Dynasty.
