Shanghai: Local agricultural products take center stage at Disney dining

On July 22nd, during the solar term of Great Heat, the hot summer season witnesses a bountiful harvest of fruits and vegetables. From today until the end of August 2024, visitors to the Lumière's Kitchen at the Shanghai Disneyland Hotel can embark on an incredible food journey to enjoy exclusive summer delicacies. These seasonal dishes feature Shanghai's local agricultural products, such as the 8424 watermelons and Nanhui honey peaches, offering guests a distinctive taste of Chinese flavors.

According to Disney's head chef, the 8424 watermelons from the Pudong district are renowned and favored nationwide for their thin skin, crisp flesh, and high juice and sugar content. The chef takes advantage of the watermelons' refreshing sweetness to create a variety of desserts including watermelon cream mochi, watermelon mousse cake, watermelon tart, and watermelon shake. Additionally, innovative dishes like watermelon thick omelet and watermelon rind stir-fried pork neck are also featured. These creations highlight the original flavors of the ingredients while pairing them with carefully selected items like eggs and pork, delivering a multifaceted gustatory enjoyment.

The Nanhui honey peaches are known for their rich aroma, juicy texture, and sweet flavor. The chef combines the peach flesh with various ingredients, such as pork, chicken, and vegetables, creating a range of dishes including peach and pork rolls, roasted chicken legs with pan-seared peaches, and peach salads. Sweet treats such as peach roll cake, peach mochi, peach bubble milk tea with pudding, and peach Collins are also created, adding a touch of pink sweetness to the dining experience.

The Sanlin crackable melon is another local gem from Pudong, distinguished by its golden color, paper-thin skin, and delicate texture. At Disney, the melon is featured in a variety of healthful, tasty, and visually appealing dishes, including crackable melon and avocado yogurt parfait, crackable melon macarons, crackable melon crepes with chocolate sauce and cream, and crackable melon salad, all tempting choices for diners.

The flesh of Chongming golden melon has a unique texture that turns into crystal-clear golden threads when blended, with a flavor reminiscent of sea cucumber—tender, fragrant, and crispy. Disney's chefs pair it with local seafood such as orchid mussels and clams to create refreshing summer dishes like golden melon with orchid mussels and clam salad with golden melon.

The small oil gourd from Nanhui is another unique Shanghai ingredient. Breaking away from conventional flavors and single recipes, Disney's chefs combine small oil gourds with various seafood and blend them with fish gluten, and spicy beef tongue to create a diverse menu offering, catering to the discerning palates of the diners with a wide range of flavors.

7月22日,节气大暑。火热的夏季,也是瓜果丰收的季节。即日起至2024年8月末,游客在上海迪士尼乐园酒店中的卢米亚厨房就能开启尝鲜之旅,享受夏日限定美食。本次夏日限定美食精选上海当地特色的农产品,比如8424西瓜、南汇水蜜桃等等,为游客带来别具一格的中国风味。

据迪士尼主厨介绍,浦东8424西瓜以皮薄、肉脆、汁多、糖度高的特色风靡全国,广受喜爱。大厨利用8424西瓜清新香甜的特点,不仅创造出西瓜奶油大福、西瓜慕斯蛋糕、西瓜挞和西瓜摇摇乐等甜品,更创新性地推出西瓜厚蛋烧、西瓜皮炒猪颈肉等精美菜肴。在保留食材原始风味的基础上,使之与鸡蛋、猪肉等精选食材碰撞,激发出多重味觉享受。

南汇水蜜桃香味浓郁、汁多味甜,大厨将其果肉与猪肉、鸡肉、蔬菜混搭,创作出水蜜桃猪肉卷、烤鸡腿配香煎蜜桃、水蜜桃色拉等可口美食,还打造了水蜜桃蛋糕卷、水蜜桃麻薯、蜜桃啵啵奶冻杯、蜜桃科林斯,为食客们的餐桌增添一抹甜蜜的粉色。

三林崩瓜也是上海浦东的“名片”之一。其色泽金黄、皮薄如纸、一触即破。在迪士尼大厨的手中,无论是崩瓜牛油果酸奶谷物杯、崩瓜马卡龙、崩瓜可丽饼配巧克力汁和奶油,还是崩瓜沙拉,健康美观又美味的崩瓜系列让人食指大动。

崇明金瓜的瓜肉经搅拌会自然形成晶莹透明的金黄色细丝,鲜嫩清香,松脆爽口。迪士尼大厨将其与兰花蚌、蛤蜊等本地海鲜结合,创造出金瓜丝拌兰花蚌和蛤蜊拌金瓜丝两道爽口解暑的夏日小菜。

小油丝瓜是来自上海南汇的特色食材,迪士尼大厨打破特定风味和单一食谱的思维定式,将小油丝瓜与各种海鲜搭配,还将其与鱼面筋、椒麻牛舌等特色风味结合,创造出丰富的菜单选择,多种口味满足食客们挑剔的味蕾。
