Cantonese cuisine, one of China's traditional eight culinary styles, is renowned globally for its diverse and meticulous ingredient selection, inclusive cooking techniques, and its light and fresh flavor. According to historical records, Cantonese cuisine originated in Guangzhou and, through the ancient Maritime Silk Road, spread the rich culinary culture of Lingnan to all corners of the world.

原广州市民间文艺家协会主席曾应枫,多年来一直关注岭南广府文化的传承与发展,在具有悠久历史的粤菜文化研究中颇有建树。她眼中的粤菜是世界饮食文化的瑰宝,粤菜餐馆早已遍至全球各地,为海外华侨华人提供了一抹家乡的味道。粤菜的一滋一味,不仅蕴藏着舌尖上的本地风味,也寄托着岭南人的家乡眷恋。
Zeng Yingfeng, the former chairman of the Guangzhou Folk Literature and Art Association, has long been dedicated to the inheritance and development of Lingnan Cantonese culture. Through years of research into the extensive history of Cantonese cuisine, she considers Cantonese cuisine a treasure in the world's culinary culture. Cantonese restaurants have proliferated globally, offering a taste of home for overseas Chinese. The distinct flavors of Cantonese cuisine not only encapsulate local tastes but also reflect the deep nostalgia of Lingnan natives.
在历史长河中,粤菜是广州连接海内外的重要窗口。近年来,依托“食在广州”“粤菜师傅”等金字招牌,粤菜正逐步走向全国、走向世界,让愈来愈多的食客认识粤菜、热爱粤菜。
In the river of history, Cantonese cuisine serves as an important gateway for Guangzhou to connect with the world. In recent years, with iconic brands like "Eat in Guangzhou" and "Master of Cantonese Cuisine", Cantonese cuisine has been gradually making its mark nationwide and worldwide, introducing more and more diners to its delights.

曾应枫介绍,粤菜在口味上具有的独特优势是其发扬光大的关键因素。“粤菜总体口味清淡,讲求四季风味流转,夏秋偏向清淡,冬春偏向浓郁。这种随季节时令的变化而变化的烹饪方式,不仅符合岭南人的生活习性,满足在地食客的味蕾需求,一定程度上也和西方追求原汁原味的烹饪理念不谋而合。因此,粤式风味正逐步名扬四海。”
Zeng explained that the unique advantage of Cantonese cuisine lies in its well-developed taste profile. "Cantonese cuisine generally features a light taste, emphasizing the flow of flavors with the seasons. It tends to be lighter in summer and autumn and richer in winter and spring. This cooking style, adapting to the seasonal changes, not only aligns with the lifestyle of Lingnan people but also satisfies the taste buds of local diners. To some extent, it coincides with the Western cooking philosophy of pursuing authenticity. Thus, Cantonese cuisine is proliferating worldwide."

“熟悉粤菜发展历史的人都知道,它既是一部中原文化与岭南文化相互交融的历史,也是一部中国传统饮食文化与现代餐饮业相互促进的历史。”曾应枫表示,随着粤菜文化在全世界的影响力进一步扩大,一道道闻名中外的粤菜在身上烙印了独特的岭南标识,其身上承载着的岭南文化让广东饮食文化走得更远。
"For those familiar with the development of Cantonese cuisine, it's the integration of Central Plains culture (the part of the North China Plain) with Lingnan culture and the mutual promotion of traditional Chinese culinary culture and the modern restaurant industry," Zeng noted. As the influence of Cantonese cuisine culture expands globally, each renowned Cantonese dish carries a unique Lingnan identity, propelling Guangdong's culinary culture even further.
