City Life|Some seasoned diners can order off-menu dishes even at restaurants they think they know well. These dishes can completely overturn their long-held impressions of a restaurant’s signature offerings. Far from keeping them under wraps after their meal, these foodies readily post photos of the secret dishes and menus online.
These premium dishes often feature rare ingredients, carefully selected produce, elaborate cooking techniques and the chef’s signature skills.
A time-honored Cantonese dai pai dong, an open-air cooked food stall, Guangzhou's Xin Ji was one of the city’s four most renowned eateries in the 1980s and 1990s. It has once again retained its Michelin one-star rating.
To make sure first-time visitors, especially younger diners, can still experience some of Xin Ji's most popular classics, several crowd favorites have been kept on the menu: Shredded Chicken with Pickled Leek, Stir-Fried Thin-Sliced Abalone and Beef with Preserved Olive Vegetables, and Baby Geoduck Drizzled with Hot Chicken Oil.

信记是广州传统粤菜大排档,是上世纪八九十年代“四大名记”之一,近日再度蝉联米其林榜单一星。为照顾从未去过信记的年轻人,在菜单里,我们保留了几个广受食客欢迎的招牌菜。荞头手撕鸡、榄菜花趾炒鲍片、鸡油淋蚌仔……菜单看似传统,一顿下来,一群看似见多识广的老饕都被镇住了。
