秋季是吃蟹的好时节,各色青蟹早已崭露头角,成为热销产品。广东近海,海蟹居多,青蟹最为著名。相对于江南大闸蟹的名声在外,生活在珠江口咸淡水区域的青蟹总是显得淡定而从容。广东一年四季都有产青蟹,以青蟹的不同生长阶段分为:水蟹、肉蟹、膏蟹、奄仔蟹、重皮蟹、黄油蟹等。每个阶段的青蟹味道都不同,例如肉蟹以肉为美,优质肉蟹的蟹肉丰满、爽滑鲜甜;膏蟹以蟹膏美味著称,各个阶段的青蟹价格亦有所不同。
