To make the shrimp dumplings,the chef uses a key ingredient called “Deng mian”, a wheat starch.Then, pour some boiled water onto the wheat starch and scaleit constantly, which creates a dough for a thin and resilient wrapper.
A qualified shrimp dumpling wrapper comes out by patting the dough with a knife. It is called "Yin Yang Pi".The thin side is folded and the thick side forms the base,so that the wrapper won’t be broken easily.
The filling of shrimp dumplings requires fresh and flavorful ingredients.

今天打卡有100多年历史的“中华老字号”——陶陶居,尝尝他们的“招牌大虾饺”。
陶陶居创于1880年清朝光绪年间,雕梁画栋的建筑气派典雅,可同时接待1300多名食客用餐。
陶陶居的招牌大虾饺,一口穿越百年。
制作虾饺,师傅会用到一种叫“澄面”的原材料,热水烫面,做出来的虾饺皮才够薄而且有韧劲。
好的虾饺皮,是用刀拍出来的,行话叫“阴阳皮”。薄的在上,厚的在下,包起来就不易“穿”(破洞之意)。
虾饺的馅料讲究食材要鲜,肉汁丰富。陶陶居的招牌大虾饺,除了新鲜手剥虾仁之外,还加入了笋丁和猪油,令其鲜上更鲜。
包虾饺要以细褶捏成小扇子状,有13道褶纹才算合格。这并不是为了炫技,而是为了预留足够空间,让虾饺爆汁的口感充分体现。
蒸好的虾饺,顶部来些鱼籽点缀,更是锦上添花。
